- 2 cups of water
- 1⁄2 cup of pearl barley
- 1⁄2 cup of quinoa
- 1⁄2 cup of corn
- 1⁄2 cup of cannellini beans
- 1⁄4 cup of pumpkin seeds
- 1⁄4 cup of olive oil
- Juice of 1 lemon
- Sea salt
- Freshly ground black pepper
Method
Bring 2 cups of water to a boil in a medium pan.
Add the pearl barley and quinoa to the boiling water, and cook for 15 to 20 minutes until tender.
Drain the cooked barley and quinoa using a colander. Return them to the pan and mix in the corn, beans, pumpkin seeds, olive oil, and lemon juice.
Toss the ingredients together, season with salt and pepper to taste, and serve promptly.
